The common method of cooking is the hot water method. Add the dried rice, unwashed, to a pot of boiling water and boil for 7 to 8 minutes. Fry it in a colander, discard the hot water, return it to the pot, and cook over low heat until it’s done.
The moisture on the surface of the rice evaporates, leaving a scorched surface on the bottom.
This creates a fluffy, fragrant rice typical of Thai rice.
