Japanese style Soybeans Recipe – Gomoku-mame

Adding burdock or lotus root makes it even more delicious.
Ingredients
Dried Soybeans 250g
2 Carrot
Sugar 3 tablespoons
Mirin 2 tablespoons
Soy Sauce 5 tablespoons
Dashi broth 800ml
(Combine the dashi stock and the Shiitake soaking liquid to make 800ml)
Directions
- Wash, and soak soybeans in plenty of water over night (8-12hours).
- Carrot – Cut into 1cm squares.
Konnyaku – Cut into 1cm squares, rub with 1 teaspoon of salt and leave it for about 10minutes and then wash it with water.
Dried Shiitake – Soak in water about 30 minutes and then cut into 1cm squares. After drain shiitake, reserving the water in a small bowl. (Use as dashi soup water later) - Put all ingredients in a pot.
- Boil over medium heat.
When it boiled, remove the lye several time using ladle. - When the lye is almost gone, reduce the heat to low heat, cover and cook for about 45 minutes.
Turn off the heat after beans become soft and let it cool as it is. Then the taste will soak in well.
